I have always been a little bit jealous of those guys who can take a knife that has an edge that looks more like a butter knife than a precision piece of steel that can shave hair off your arm and have it doing just that in a matter of minutes. The interlocking diamond wheels on this model are an item that has only been seen in commercial grade sharpeners until now. The wheels allow an even amount of metal removal from each side of the blade at the same time which leaves no micro-burrs. This will get a precise edge on your knives. The carbide alignment slot is great for touching up damaged blades and the ceramic slot finishes up your blade with a razor edge. Also built into the body is a left and right handed scissor sharpener.
I didn’t need to go far in my knife drawer to look for something to field test. I pulled out the oldest boning knife in my arsenal which would have made it into the trash years ago if it weren’t for the fact that it was handed down from a special family member and also has a great stag antler handle. Since this knife was in such bad shape, I turned the machine onto the high speed setting and with only three passes over the diamond wheels, I had a good edge. Turning the machine down to lower speed with another three passes and a couple of swipes through the ceramic finishing stones and I was able to shave hair. I spent the afternoon going through every knife that we own and putting a fine edge on everything.
